I have a party to go to tomorrow night. And I was asked to make something. I got lots of hints to make my chili… but my wife can’t eat it, and it can get expensive to make. So after a bit of thinking, I decided to make Baked Potato Salad.

I first had it a long time ago from Albertsons, and in fact it was a stable at many a BBQ. But the cost of it (around $5-6 a pound) made it more of an occasional treat. Well a while ago I tried a couple different recipes for it. But I never got one I liked. So tonight I made one up. Like most of my recipes it’s really basic, but it turned out pretty decent (became my dinner.) The only issue I had… it takes a LOT of prep :( .

Ingredients
10 lbs Red Potatoes
2 Bunches of Green Onions
2 lbs Bacon
1½-2 lbs of Sharp Cheddar
2 64oz Containers of Sour Cream
Cube of Butter
Salt & Pepper
Garlic Powder
I boiled the potatoes in three batches since I have a small kitchen, boiling them about 20 minutes each, until the fork started sinking in easily to the potatoes (not mushy). I then set the potatoes out and let them cool. I cubed the potatoes and put them in baking pans and then sprinkled Garlic Powder over all of it. I then baked them for about 35 minutes. Meanwhile I sliced up the bacon and cooked it all. While it continued baking I chopped the green onions and shredded the Cheddar Cheese. And placed the bacon, green onions and cheddar off to one side. I then split the potatoes into two pots, dumped one 64oz Sour cream in each, half of the cheddar cheese, green onions, and bacon and half a cube of bacon. I then stirred it all together, mixing in salt and pepper to balance (A lot of my measurements are the old handful measure.)

I heat up a bowl about 30 seconds “for testing” and then put the rest into the fridge until use. It’s definitely pretty good. I’m not sure what’s missing… but it tastes good.
